OK, so I freely admit I've been watching one too many food shows  Grin (Cake Boss, Food Network Challenge, etc) ... and always being up for a challenge I decided to give sugar work a shot...

My first attempt at producing a sugar-glass sheet turned out well, but it got sticky very quickly.  Any suggestions on how to prevent that from happening?

don't do it on a humid day and make sure you reached the correct temp.
