Downloading music off the internet... obviously it's wrong/immoral/stealing. Have any vatican documents been issued recently about this topic? I need to prove to a friend that the church has specifically said this is wrong.

I doubt that the Church has spoken to it specifically (tho' I stand ready to be corrected) but it falls under the general rules on theft (it is!) and breaking just laws (it does!).
Yes, an explanation of why it's stealing would be great. I know it almost seems like a stupid question with an obvious answer. In my mind, of course it is stealing and I have no problem seeing that. This person just doesn't see anything wrong with, for example, her best friend going out and buying a CD, and then burning a copy of the cd for my friend (or letting her copy it to her iPod for that matter).
Have there been any articles recently from cardinals or bishops who have spoken about this matter? Thanks for all the help everyone!
The argument is as old as the hills:
"I'm not breaking into a warehouse and depriving anyone of anything, I'm just using some technical expertise to give myself free cable."
Basically, the argument says that since you're just duplicating (or descrambling a cable signal), that there is no victim and hence no crime.
However, you are getting something for nothing in both cases, and it deprives the cable company, or the artist, of revenue. It is unjust and therefore actually sinful.
(As a side note, part of the punishment for those who steal cable is getting corrupted/brainwashed by the cable they stole...hahaha)

What if you never would have paid for it anyway?
It doesn't matter. You are taking something that is legitimately sold and using it without giving the seller money he is morally due.
I've used in the past this logic in obtaining expensive software to try them out and use them as a hobby. You can make the calculation it's a minor offense, but you can't weasel out of the fact it's a wrong.
Plus, in the case of music, it's not expensive, if you would not pay for it, it's because you don't really want it.
