I agree with the people who said that you should at least try to eat what you're offered, but if you're talking about seconds and thirds, or having to eat things you are allergic to, or so disgusted by you might as well be, you should be able to say, "No, thank you." It's rude for your hosts to try to force you to eat. Maybe if you just keep repeating, "It's delicious, but I'm full" they'll get the idea after a while.

 

But I'm Italian, and underweight, so I know how it is.

You eat turkey on Friday! Oh my, no dispensation given for that amongst traditionalists!

 

I know a family that is from Italy and whenever we go visit they FORCE food upon us.  My husband is on a limited diet so a lot of their food is not too good for him - like the white noodles.  He has learned to accept a little of what they offer or else their feelings are seriously hurt.  Don't know if yours is a similar situation or if people there who are stuffing their faces don't like seeing you eat just a little bit lest they be seen as gluttons.  When offered something you don't want, just say "sorry, doctor says that's not good for my current diet."

For our lovely hostess everything went wrong.  She is a very sweet woman and lovable in every way.  She did not serve anythings unusual and I was not offered anything that I did not want.  My worse nightmare was never realized.  Laus ti Domine.  It was a very very nice holiday.  I hope all of yours went well and that no one spilled the casserole on the way to Aunt Martha.
