Is the Ave Maria a hymn? I wouldn't call the Pater Noster a hymn if you sang it, though I'm not really sure why.
Anyway, as I look through people's replies I keep thinking, Oh  yeah, there's that one too! And that one! So I can't decide. But two that haven't been mentioned yet are Corde Natus Ex Parentis and Quem Pastores Laudavere. And Angelus ad Virginem!

I enjoy hymns more than secular music so here's a few of my favorites (not in any particular order):

1.  Alleluia, Sing to Jesus
2. Pange Lingua
3. What Child is This?  (yes, I know this is a Christmas hymn :D)
(I especially like the part:
 Nails, spear shall pierce Him through,
The cross be borne for me, for you.
Hail, hail the Word made flesh,
           The Babe, the Son of Mary.")  
4. Adeste Fideles
5. All Glory, Laud and Honor

That's to name a few....

I think that's because the Pater Noster, as sung in Mass, would be considered part of the Ordinary. A hymn implies a religious song that's not a part of the Mass itself (whether Ordinary or Proper); although which could be sung in the Mass as "filler music", such as the processional, recessional, Communion hymn, Offertory hymn, etc. I'm probably not using the right terminology here, and whenever MagisterMusicae sees this, he'll let everyone know what I really meant to say.

I would classify it as a chanted antiphon. I love the Vidi Aquam as well. Also, don't forget the beautiful "Ecce Lignum Crucis" dialog  on Good Friday.

Ah, if it comes to antiphons, my favorite is the shortest. The Lumen Christi! of Easter Vigil never fails to bring tears to my eyes and a lump to my throat.
