Black beans sautéed with mangoes, onions, red peppers, garlic, scallions, and cilantro.  Served atop steamed brown rice.  Jalapeño corn bread.  A Stella Artois beer.

That sounds lovely!

As do your portobello burgers, Laura.  Portobellos are my favorite beef substitute.  Have you ever used them in a Shepherd's Pie?  Scrumptious.  There's a good vegetarian recipe for Shepherd's Pie in the Veganomicon, but I had to tweak it a bit before it met my standards: portobello, not shiitake.

I LOVE Portobellos. And.... The Veganomicon's great!

I recommend you check this book out, as well: Vegetarian Cooking for Everyone by Deborah Madison. ( http://www.amazon.ca/Vegetarian-Cooking-Everyone-Deborah-Madison/dp/0767927478/ref=sr_1_1?ie=UTF8&s=books&qid=1299637980&sr=1-1 ) It's one of the most used and loved-up books on my shelf. Her ideas are fun, practical, interesting... and yummy. Especially since you can really, really easily change them around to suit your own tastes. And you really don't even have to be a vegetarian to love this stuff, or for that matter the Veganomicon.  ;D

Oh, and just so I don't get 'off track' with this thread.... for lunch today I had leftover homemade pierogies. Yum.

Generally, no, but if it's truck stop coffee that can be chewed you should check with your Confessor.
