I'm not much of a fan of any of the beef subtitues...I'm not into buffalo either.
I have been told that deer can be good....the deer I've had is never a winner...it just has to be aged like beef...I wouldn't know...but am willing to give it a go.
Antelope is good, that I have had...but it may have been aged...and I would never call it a beef substitue.

I don't know why anyone would ever want to substitute anything for beef. I'm all about eating weird crap though. I haven't had ostrich but I'd like to try it. I'll eat any animal at least once. Deer can be amazing, especially deer sausage. Back home in Wisconsin venison is all over the place. You shoot the deer, throw it on your car, and then go home and make sausages out of it. The fresher the better. My bother swears by alligator too, but I haven't had it.

I do like the deer sausage I've had. Aligator is good stuff. And it's only real Cajun if there's grass in the rice. I don't know if I posted it but there is a restaurant in some African country based on one of those Brazilian steak houses (churrascaria). this video is of Carnivore in Johannesburg there may be another at this point...zebra, giraffe, croc...etc..

Alligator is really good, and so are crayfish (I call em' crawdads, but I'm a country boy). Deer is also good as long as it is prepared right - although times it can taste a bit "gamy." Now wild turkey - deep fried - Ooooh yummy! Squirrel is terrible - really tough, but rabbit is good.
