Haha yes probably this.  But as lame as it might sound, I also find bashing out some Rachmaninoff on the piano to be pretty good at relieving stress.  Mind you my piano probably won't outlive me at this rate.

Playing drums really helps me.  One of my favorite things to do when I get home from school is play my drums right away.  Otherwise, reading and something physical, like push-ups or burpees or something.  I have a punching bag, but use it for exercise and fun, not as  destressor.

meditation, glass of wine, reading and/or studying, listening to music, playing the guitar, martial arts (slow tai-chi like, not heavy bag stuff), walking, chatting with wife, playing with the kids, or yelling "serenity now!"

Video games and dates. Sometimes combined.

I think Gregorian chant is de-stressing if it's not one of those practices 5 minutes before Mass begins that you should've started on a week ago.
